Become familiar with the recipes and concepts which form the basis of every competent baker’s repertoire. Start with learning how to make pate sablee, a classic short crust pastry dough that, once baked, becomes the base for any tart you can imagine. Then, put your new skills to work by creating “Pear Pie Tarte Bourdaloue and Crème Anglaise with Saffron.”
