In this demonstration class, learn the classic croissant shape, danish shape, pain aux chocolat shape, cinnamon swirl shape, and croissant muffin shape and how to make butter blocks according to the size of the dough. Discuss varying ratios of butter to dough and how it effects the end result. Discover the history of the croissant through the ages; along with yeast, gluten development and fermentation.
